The Holloways Project is our exploration of mixed culture and wild fermented ales, paying homage to the generations of brewers who carved this path, and the brewers of today who continue the tradition forward. Mixed Culture Saison with Peaches: 7% ABV

Our first introduction of the Holloways Project is Peaches; a mixed culture saison conditioned on fresh peaches. This beer was fermented in oak barrels with a blend of French saison yeast and brettanomyces for 10 months, and then conditioned on fresh peaches for an additional 5 months. We then hand packaged and bottle conditioned this beer until we felt it was naturally carbonated to our liking. 

Pouring straw yellow in color, with a strong aroma of peaches and brettanomyces. We taste notes of peaches, a light acidity and pleasant funk that leads to a dry finish.
